The Best Strawberry Jam


Remove green tops and slice strawberries in half.

Juice fresh lemons for lemon juice.

Optional: Split vanilla bean in half.

Add strawberries, sugar, lemon juice and vanilla bean to a big pot.

Stir all ingredients together and let sit at room temp for 30 minutes to macerate.

Stir every 10 minutes to help the sugar dissolve.

Place pot on the stove and bring to a boil, stirring occasionally.

Continue cooking until it hits the jam setting point, around 104 ºC (220 ºF)

The jam should wrinkle when nudged.

Freezer plate test

Divide the jam into jars leaving ¼ inch headspace.

Enjoy your strawberry jam on toast!

Use the jam to fill shortbread sandwich cookies.
